Chicken Salad Pita

Don't feel like eating rice?
Sick of bread too, huh?

With just simple ingredients you can whip up this filling quick meal in under 30 minutes.

The ingredients :

Pita Bread

Lingham's Chilli Sauce
Lady's Choice Salad Sauce
Fresh crispy lettuce

The bird was purchased from Cold Storage already grilled. We personally love the supermarket's black pepper grilled chicken. Nicely marinated and grilled to perfection.

The bonus was, the birdies were on offer
that day. Woohoo! Only SGD $4.99!

Other ingredients:

Big Yellow Onions & Capsicum

Optional Ingredients :

Black pepper (grind)
Tomato
Cucumber

Saute a few slices of the big yellow onions until they are fragrant. Add in the diced black pepper chicken together with the chilli sauce and salad sauce. About 2-3 tablespoons each (for a small bird). After a good quick stir fry, add in the sliced capsicums.

If you like to add in extras like diced tomatoes, cucumber and what nots... go on.. just throw them all in! We like our capsicum crunchy so turn off the fire after a few stirs round the pan.

Rinse some lettuce and slot a nice crispy leaf as base inside a pita that has already been cut in half.

Use a small spoon to delicately fill up the pita with the stir fried ingredients. Drizzle more of the sweet Lingham Chilli Sauce if you like. :)

A small bird can fill about 9 to 10 pitas
like the one pictured above!

Here's a close-up of the quickie meal of Chicken Salad Pita.
